What is Sambar ?
Sambar also spelled as Sambhar is a special type of South Indian spicy soup-like dish normally made from Toor Dal lentils. Together with lentils, Sambhar may include fresh vegetables like onion, tomato, brinjal, carrot, drumsticks etc. Almost all vegetables can be used to prepare Sambar, except soft vegetables, which may be overcooked during the preparation. Indian spices like mustard seeds, fenugeek seeds are used to season the Sambhar and later it is garnished with fresh coriander leaves. Sambar can be served as an appetizer, side dish, or the main course of a meal which is a perfect combination for Idli, Dosa, Vada and Rice.
