Chick peas which is commonly known as ‘Kabuli chana’ is a kind of Legume, which are light yellow smooth skinned mostly used in Indian cooking specially in Punjab. Dried chickpeas need a long cooking time (1–2 hours) but will easily fall apart when cooked longer. If soaked for 12 hours before use, cooking time can be considerably shortened. Chick peas are used to make curries and are one of the most popular vegetarian foods in India, Pakistan, Bangladesh and the UK. On the Indian subcontinent it is generally used in making different types of popular Indian recipes which is when combine with bhatura or puri/poori (a kind of Indian bread deeply fried in oil) or saffron rice pulav is really makes a very tasty combination. Beside these, Chick peas are also used in making various kinds of dessert, Side dishes, appetizers, salad, soup and chick peas mixed vegetable in Indian cuisine. Chick peas provide protein, zinc and dietary fibers in Indian food.

How to prepare chick peas ?

In a big vessel take 1cup of chick peas and pour 4cups of water, add a Pinch of eating soda and salt. Soak this over night. Next morning in that same water put a tea bag. Cook it on the high flame till 15 minutes along with tea leaves bag till chana becomes soft. When cooked discard the tea leaves pouch now chick peas become very soft and can be eaten cold for making salad, Jhal moori, chick pea’s pulao or any kind of desired Indian delicious recipe.

• 2 cups chick peas (cooked)
• 1 Bay leaf
• 1 teaspoon mustard seed
• 1 teaspoon cumin seeds
• 1 teaspoon methi seeds
• 1/2 teaspoon red chilli powder
• 1 teaspooon cinnamon
• 1 dalchini, small piece
• 1 teaspoon anardana paste
• 3 cloves
• Pinch of eating soda
• 1/2 teaspoon black pepper
• 1 teaspoon Garam masala/MDH chole masala
• 1 teaspoon mango powder (aamchur)
• 2 spoon ghee
• 2 Green chilies
• 2 Medium size onion finally chopped
• 2 Medium size tomato
• 1 teaspoon ginger paste
• 1 teaspoon garlic paste
• Salt as per taste
• 1 Tea bag
• coriander leaves, finely chopped
